Ethiopia Sidamo is sourced from family owned farms within the Sidamo growing region of Ethiopia. Farmers deliver their ripe cherries to washing stations where the coffee beans are immediately sorted and placed on raised drying beds. These carefully constructed beds help to ensure that the coffee has adequate air circulation and maintains a proper temperature for an optimal drying process. Once the moisture of the cherries is reduced to 11.5-12% it is then exported.
