Over 19,000 coffee growers deliver their ripe cherries to a washing station in the Hararghe Zone where the coffee is processed. The coffee cherries are meticulously sorted at the mill and immediately placed on raised beds and dried over a period of 15 to 20 days while they are turned and rotated regularly to prevent any damage from occurring during the drying process.
